Easy BohoBake Oven

Individual Chocolate Cakes

The time it takes to type this post, I could have made another batch of these Beauties!  
This recipe goes against everything I believe in-NO OVEN! but I kind of love it.  We don't have to kill ourselves every time we entertain!  Finding that balance is my ultimate goal in life.
So...

8 oz unsalted butter (Plugra) or you could use Smart Balance Butter
8 oz dark chocolate, chopped I used Callebaut 60.3 % (the percentage meaning its couverture.  Couverture means high quality chocolate that contains extra cocoa butter, making it more creamy and it won't break as easy) buy a good chocolate, there aren't a lot of ingredients in this recipe and the chocolate is the star of the show!
3/4 c xylitol
3/4 oat flour
4 organic eggs
1 tsp salt
1 tsp grated organic orange zest or more
* optional if you like spice add 1 tsp of cinnamon and 1 tsp chipotle (i love Hugo's chocolate cake infused with chipotle, so i thought i would try to add some)
add whip cream, fruit, powder sugar or ice cream to finish

Put chocolate and butter in glass bowl and microwave for 1 minute.  Starting in center of bowl stir (with spatula) outwards.
Whisk together xylitol and remaining ingredients in separate bowl.    Whisk in chocolate mixture.  Divide among ramekins or (10 oz cups) fill cup 3/4 full
Place in microwave for 3 minutes on highest setting.  Let cool for 30 seconds.  Finish with whip cream, fruit, powder sugar or ice cream.
