i made these little yummies for a great substitution for a healthier quiche!
recipe adapted from food jules
2 cups of cooked quinoa- i cooked mine in my rice cooker with low sodium chicken broth instead of water
2 large organic eggs
1 cup of shredded organic zucchini-you can leave skin on
1 cup of shredded organic cheddar cheese
1/4 c of minced organic italian parsley
1/2 c diced organic uncured ham
2 tablespoon of a good parmesan, grated
2 stems (green & white parts) organic green onions, minced
1/2 tsp salt
1/2 tsp pepper
optional: add 1/2 to 1 c of organic low sodium chicken broth
Preheat oven to 350 degrees and spray the muffin pan with olive oil spray. In a large bowl, whisk eggs, shredded zucchini, cheddar cheese, parsley, parmesan cheese and green onions. Stir in cooked quinoa and season with salt and pepper. Spoon mixture into each muffin cup. Bake for 15-20 minutes or until light golden brown.
