bohoEATS...Chicken Satay


Chicken Satay
2 packages of Organic Chicken breasts, Cut in strips
1 gallon Ziploc Bag
1 Tablespoon of Penzey's Hot Curry Powder
2 Teaspoons of Gluten Free Organic Soy Sauce
3 Tablespoons of Organic Lime Juice
1 clove of minced Organic Garlic
2 Tablespoons of minced peeled fresh Organic Ginger
1 Teaspoon of salt
15 presoaked skewers
Start Skinny Rice in Rice Cooker.

Add all ingredients in Ziploc and let marinate in Refrigerator overnight or 1 hour.  
Preheat oven to Broil, place shelf in medium to high slot in oven.
Place chicken on cooling rack on top of cookie sheet with skewers, throw away any extra marinate.
Broil for 8-10 minutes or until chicken is throughly cooked.

Serve with steamed rice and i love the chicken with the thai cucumber salad dipping sauce and peanut sauce.

Cucumber Salad

2-3 peeled and chopped cucumbers
1/4 of an Organic Purple Onion thinly sliced
1 Tablespoon of Xylitol
1/2 c Organic White Rice Vinegar
1 teaspoon of salt
1/4 c of chopped Organic Cilantro -optional
1 chopped Organic JalapeƱo -optional

combine ingredients and serve as a dipping sauce for chicken

Peanut Sauce
1/2 c of peanut butter-you can use PB2
2 Tablespoons of Sriracha
1 teaspoon of Organic Gluten Free Soy Sauce
1 teaspoon of Organic Toasted Sesame Oil
2 Tablespoons of Organic Hoisin Sauce
4-5 Tablespoons of hot water to thin the sauce -add more if you prefer a thinner consistency
optional chopped Organic Peanuts

combine ingredients and serve as a dipping sauce for chicken
