bohoEATS Protein Packed Pancakes

My Workout Partner, bohoMelisa, just shared a great Protein Packed Pancake recipe that even your kids will love.  Caymus has requested to have these every Saturday!
Recipe inspired from Biggest Loser
6 organic egg whites
1 c organic rolled oats, can use quick oats
1 c organic cottage cheese
2 teaspoons of xylitol
2 teaspoons of good cinnamon, i love penzeys vietnamese cinnamon 
2 tablespoons of good vanilla
2 scoops of vanilla protein powder
optional: banana or 1/2 c fresh organic blueberries

Mix all ingredients (except blueberries) in the vitamix until smooth (add blueberries).  Heat nonstick skillet to medium- high heat and spray with canola spray and cook pancakes until you can see bubbles and then flip over.   Serve with coconut nectar or fresh fruit.
