Banana Bread Sans Sugar, Flour & Butter

I am always trying to make our favorite foods a little healthier...

Here is my Favorite Healthy Banana Bread Recipe

3/4 c Ripe Banana mashed (usually 1 banana)
3/4 c Egg whites
1/2 c Plain nonfat Greek Yogurt (i like Fage)
1 tbsp of good Vanilla (i like Nielsen-Massey Madagascar Pure Vanillia Extract) here
3/4 c Oat flour (i like Bob's Red Mill) here
2 scoops of Protein Powder here
1/4 c  Xylitol (Whole Foods carries this in the Baking section)
1 tsp Aluminum free Baking Powder 
1 tsp Baking Soda
1 tsp Cinnamon (i like Penzey's cinnamon here)
1/2 c of toasted Organic walnuts (or your favorite nut) you can use less. I like a lot!
1/4 c of bittersweet chocolate chips

yields 1 loaf
Preheat oven 350 degrees.  (use an oven thermometer here to check your oven's true temperature, mine is off about 15 degrees).
Use silicone loaf pan or spray non-stick baking spray in loaf pan, set aside.  Lay parchment paper in bottom of pan.  Toast walnuts in oven at 350 degrees for 5-10 minutes until fragrant.  Let cool and coarsely chop walnuts.  Mix banana, egg whites, yogurt, vanilla together with a spatula and add dry ingredients.  Bake 16-18 minutes.  Check center is cooked all the way through with cake tester.

Optional: Drizzle top with powder sugar or chocolate syrup

Chocolate Syrup

6 oz finely chopped bittersweet chocolate
6 tablespoon of water
2 1/2 tablespoons Xylitol
dash of salt

Put chocolate in bowl, set aside.  Combine all other ingredients in small sauce pan over medium-high heat; until Xylitol dissolves.  Add to chocolate.  Stir in circular motion starting in center of bowl with spatula.  

Powder Sugar

Put powder sugar in a sugar shaker (i like this one here)
