yields 1 dozen cookies, perfect for a light dessert for your family
preheat oven 380 degrees
line a baking sheet with parchment paper
2/3 c plus 1/2 c organic oat flour
1/4 teaspoon of salt
1/2 teaspoon baking soda
4 teaspoons xylitol brown sugar, brown coconut sugar or sucanat i like idea sweet for xylitol, you can buy on amazon
4 tablespoons of xylitol
1/4 c organic hazelnuts ( i roast mine in the oven on a cookie sheet for 8 minutes on 350 degrees) optional
1/4 c organic walnuts ( i roast these as well) optional
1/2 c bittersweet chocolate chips ( good quality like Callebaut or Valhorna)
1 tablespoon of vanilla ( good quality like a Madagascar Vanilla)
2 tablespoons of coconut oil (make sure the coconut oil is for high heat)
3 tablespoons of organic milk (you could substitute with Almond Milk) i use whole raw milk
Mix all in a small bowl, refrigerate dough for 10 minutes to make the ingredients bind together, roll into balls and bake for 8 minutes or until golden brown. Let cool for 10 minutes.
Let cookie sheet completely chill to use for next batch.
* you can add some vanilla protein powder to mixture
if you prefer pecans use pecans!!! i personally like the combination of hazelnuts and walnuts with the chocolate.
