Poaching chicken and boiling eggs are a must every week at our house! It's so easy too!
1 package of hormone and pesticide free organic chicken breasts
1 organic lemon
1/2 organic yellow onion
any herbs you have! oregano, rosemary, tarragon, dill, thyme...
2 organic carrots roughly chopped
3 organic celery stalks
dash of salt
Add in pot with enough water to cover chicken and simmer for about 15-25 minutes or until cooked all the way through. Let chill and I like to slice chicken on a bias and snack on all week. Caymus and Gjelina love it.

Healthy Chicken with Crushed Avocado
shred about 3 poached Chicken Breasts
1/2 of bunch of cilantro, chopped
2 ripe Avocados
2 limes
1 garlic clove minced
s/p
add all ingredients in a bowl and mix together!
And i eat with Mary's Gone Crackers
