Meatless Lasagna

I was skeptical about what the results of this recipe would be like-but it was really good AND it's so creamy!-you feel like there is cheese in it!  


1/2 c organic Almonds
1/2 c organic Walnuts
1/2 organic yellow onion
2 organic garlic cloves, chopped
1 bunch of fresh organic Basil leaves, remove stems
1/8 tsp ground nutmeg (sometimes i grate fresh nutmeg from Penzey's instead)
1/8 tsp salt
black pepper to taste
1/2 c water
1 jar of marinara sauce
1 box of brown rice lasagna pasta
1 bag organic spinach
2 large organic tomatoes, chopped

Preheat oven to 375 degrees and spray a 9 inch casserole pan with cooking spray.  Combine walnuts, almonds, onion, garlic, basil, nutmeg, salt, pepper and water in blender and blend until smooth.
Spread marinara sauce on bottom of pan and layer uncooked pasta, nut mixture, spinach, tomatoes.  Repeat 3 times.  Bake for 50 minutes or until lightly brown.
