Super Easy Penne & Elbow Quinoa Pasta with Ground Chicken bohoEATS





Penne & Elbow Quinoa Pasta with Ground Chicken

1 box of Quinoa elbow pasta
1 box of Quinoa penne pasta
1 bag of Frozen organic peas
1 1/2 lbs of hormone-free Organic Ground Chicken
3 tablespoons of Organic Fresh basil chopped
3 tablespoons of Penzey's Pasta Sprinkle (or any italian seasoning)
2 tablespoons of Olive oil
2 garlic cloves, chopped
1/4 c of low fat Organic Sour cream 
s/p

Boil water for pasta, cook al dente (drain).  Sauté chicken in olive oil and garlic, add seasoning and basil until golden brown  (continuing to break up the chicken into small pieces).  Add salt/pepper to ground chicken.  Boil Water and add peas (drain).  Add pasta, ground chicken, peas and stir in sour cream to coat.  S/p to taste.  


BTW, I am stuffing my face with pasta as i write this post.  This Pasta is soooo good.  Grant used to make something like this in his bachelor days, i just modified it a bit!  he calls it S.O.S.- it's one of those meals that eats better on day two reheated in skillet with olive oil to crunch up the pasta!
