bohoEATS-Roasted Beets

We love getting our FARMHOUSE Box and this past week we had BEETS.  Beets are so gorgeous and good for you-here is one way to create a chef inspired salad.

I learned how to roast beets while overlooking at Ibiza Food and Wine Bar.  Keep the skin on the beets, wash thoroughly and wrap with tinfoil.  Place in oven at 400 degrees and depending on the size of beets roast for 25 minutes to 1 hour.  Pierce with a fork to check for tenderness.  Pull out of oven and let cool, then take a vegetable peeler and peel the skin.  

I love the beet salad at Brasserie 19 and have a SIMPLE way to duplicate it.
Take your roasted BEETS & slice them, toss arugula with olive oil, pesto, and garnish with goat feta and marcona almonds.  Plate arugula then place sliced beets, add feta and almonds.
