I grew up eating CRISPY fried Okra and while this recipe is Curry influenced it still has a nice CRUNCHY texture.
2 tablespoons of olive oil
1-2 packages of Organic Okra, rinsed and chopped
4 tbs of penzey's Hot Curry Seasoning
2 tbs of mustard seed
1 tbs ground cumin
s/p
Heat nonstick pan with olive oil. Add okra, curry and mustard seed. Sauté until crispy and add salt and pepper to taste.
