bohoEATS///pickled jalapeños & pickles from Gwyneth Paltrow's cookbook, It's All Good



i am so excited bohoSarah and bohoJulie are cooking- let the recipe sharing begin!

I recently read in GQ, what David Chang, NYC restaurant owner of Momofuko, Ssäm Bar, Ko, and Má Pêche thinks we should stop emphasizing on Freshness and start keying in on ROTTEN!  He predicts the new food rage is pickling, aging and curing food!

from his article: " We reflexively recoil from the word “rot” when it comes to food, and we shouldn’t. We pay a premium for dry-aged beef because we know the older the steak, the more tender it is and the more umami it develops. That beef is rotting (okay, “aging”), but under our terms and to our benefit. Many foods are rotted to make them edible at all: olives, chocolate, coffee. And there are those that we rot to improve: pickles, cheese, wine. I find it hilarious that even the freshest foods are seasoned with rot. We dress salads with vinegar, a.k.a. rotten wine. I can’t even come up with a list of foods that I enjoy fresh more than aged—it basically stops after orange juice."

So, let's start pickling! … recipe from Gwyneth Paltrow's cookbook, It's All Good


pickled jalapeños

yields 1 veganaise jar


3/4 cup white wine vinegar

3/4 cup water
1 tablespoon coarse sea salt
a pinch of celery seed
1 teaspoon coriander seeds
1 teaspoon black peppercorns
8 large jalapeños, thinly sliced
1 bay leaf
1 garlic clove, thinly sliced


Combine the vinegar, water, salt, celery seed, coriander seeds, and peppercorns in a small saucepan over high heat, bring to a boil, and turn off the heat.  Meanwhile, pack your empty Vegenaise jar with the jalapeños and stuff the bay leaf and garlic slices in and and among the peppers.  Pour the vinegar mixture over the jalapeños, bring sure to get all the seeds into the mix.  The liquid should completely cover the peppers.  Let the jar cool to room temperature, then tightly screw on the lid and stash the  jar in the fridge.  The peppers are good to go after a week, but they keep up to a year in the refrigerator- seriously.

-our jalapeños didn't even make it to a month in the refrigerator :)


bread & butter pickles

yields about 1 pint


1 Pound cucumbers, ends trimmed, sliced into coins (the smaller the cucumbers you can find, the better; we like Kirby and Israei cucumbers best- it will take about 6 of these small guys to yield 1 pound)

1 small yellow onion, thinly sliced
2 tablespoons coarse sea salt
1/2 c white wine vinegar
1/2 c xylitol or raw honey
1 teaspoon coriander seeds
1 teaspoon black mustard seeds
1/2 teaspoon ground turmeric
1/2 teaspoon black peppercorns
A pinch of celery seed
1 bay leaf


Combine the cucumbers, onion, and salt in a large mixing bowl of very ice water and let them sit for 2 hours ( this will help keep the pickles very crunchy).  


Meanwhile, bring the vinegar, xylitol or honey, and seasonings to a boil in a large pot.  Drain the cucumbers and onions and add them to the pot.  Bring back to a boil, immediately turn off the heat, and transfer the entire mixture to a glass jar.  Once the jar cools to room temperature, put a lid on it and store in the refrigerator for up to a month (though the pickles rarely last that long!)


-i omitted the xylitol and added fresh dill.

T h a i P e p p e r L o v e… bohoEATS


i love {spicy} food!  I am that one that thinks she can handle a 5 when asked how spicy i want my entree... sometimes that bites me in the ass.  I have been cooking more stir fry lately and when I read the ingredients on some Asian condiments bottles, there were some creepy unhealthy things listed!  So, i Made my Own--------------------------------------------------------------------------------------------------

Here is how to make your OWN!

Please wear gloves when chopping chiiles… i didn't and my hands burned for days…. REALLY!

Nam Pla Prik-this is the sauce that is usually on table at thai restaurants

ingredients:

1small shallot, sliced
1 garlic clove finely chopped
13 fresh Thai chilies, sliced
7 tablespoons fish sauce
4 tablespoons lime juice

mix all ingredients together.  will last in refrigerator for a while… my guess it will be eaten before expiration.

Serve with Thai Fried rice, grilled meats and satays, noodle soups or even with plain Jasmine rice- or Skinny Rice.

1 c fresh red chilies
1/2 tablespoon xylitol
1/4 c garlic, peeled
1 3/4 c white vinegar
1/2 teaspoon salt

bohoEATS…Healthy inspired Spanish rice…It's ALL GOOD Gwyneth Paltrow




I have been so IN LOVE with Gwyneth Paltrow's cookbook, It's All Good i have literally made almost everything in it!  bohoSarah told me about the blog, For the Love Of and she talks about how Gwyneth made her do it & shares her trials of cooking from the cookbook!  You can follow her on Instagram.

  Here is one of my favs: Spanish Rice-I use Skinny Rice.  i LOVE the red/green colors- Recipe from It's All Good by Gwyneth Paltrow

^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^
1 14-ounce can of whole peeled Organic BPA Free can Tomatoes
1/2 organic yellow onion, peeled and roughly chopped
2 organic garlic cloves, peeled
1 1/2 teaspoons coarse sea salt
3 tablespoons extra virgin olive oil-sometimes i only use 1 1/2 tablespoons
1 cup organic long grain brown rice
3 tablespoons tomato paste
1/2 c organic frozen peas
2 tablespoons of cilantro, roughly chopped

Combine the tomatoes with the onion, garlic & salt in a blender and puree until smooth.  Add enough water so you have 2 1/2 cups of liquid and set it aside.

Heat the olive oil in a large nonstick heavy saucepan over high heat.  Add rice and cook until rice turns opaque and smells nutty, about 3 minutes.  Stir in Tomato Paste, so the paste really gets into the rice.  Add the reserved tomato mixture and bring whole thing to a boil.  Lower the heat, cover the pot, and simmer until rice is cooked all the way through, about 45 minutes.  Take the pot off the heat, uncover it, throw peas on the top, cover again and let the rice sit for 10 minutes.  Remove the lid and stir in cilantro.  ENJOY!

bohoEATS… Healthy Crispy Fish Sticks

I have been OBSESSING over It's All Good by the gorgeous Gwyneth Paltrow this past month.  i made these fish sticks and the babies LOVED them!  i also used the same recipe with chicken strips and they were awesome.  So, if you are craving some crunch and crispiness then try these!

Recipe from It's All Good, by Gwyneth Paltrow.

1/4 c Soy Free Organic Vegenaise
2 tablespoons coarse seeded mustard
1 tablespoon of Dijon Mustard
1 c plain gluten-free bread crumbs
1 tablespoon Old Bay Seasonings
1 teaspoon fine sea salt
4 flounder or mild white fish, we used halibut cut into 3 inch fingers
olive oil spray
lemon wedges for serving

Preheat Oven to 450 degrees F and set on convection, if available.  Line A baking sheet with parchment paper and set aside.

Whisk together the Vegenaise and the mustards in a mixing bowl.  In a separate bowl, whisk together the bread crumbs, Old Bay & Salt.  Coat the fish fingers with the mustard mixture, then Dredge them in the bread crumb mixture, tapping off any excess.  Lay the fish fingers on the prepared baking sheet.  Spray lightly with olive oil spray, turn fish fingers, and lightly spray the other side.  Bake for 8 minutes, then turn the oven to broil and broil for 1-2 minutes until desired crunchiness.  If you don't have a broil option, just bake them for 10 minutes total.  Serve immediately with lemon.

* i froze the chicken strips- just bread them, put in an airtight, lined container and bake off.

i sat next to Gwyneth Paltrow last week while at dinner in L.A.-------------------> i was dying! i felt like we knew one another… hehehe even though i have only been making her recipes, it feels like we are friends. lol

keep  slowly incorporating healthy recipes into your diet and save those calories for booze! -cheers!

btw… GP leaned over and gave her hunk of a husband the biggest kiss while having dinner with their two kids and it made me do the same!  So, one of my new year resolutions is to plant BIG ones on Grant out of no where! Gwyneth made me do it -so if you see us mugging down, we are working hard to keep my resolution! PDA 2014 share the LOVE & good food
