1 peeled and shredded Organic Sweet potato (i used my food processor)
2 sprigs of fresh organic thyme
1 dozen organic soy-free eggs
1 Greased Muffin Pan
Salt/Pepper
(optional: you can add any diced ham/sausage/ bacon to the hash)
yields 12 muffin sized sweet potato nests
Preheat oven to 350 degrees. Fill muffin pan with the shredded sweet potato to the top. Sprinkle with salt and pepper and bake for 15 minutes. Add one whole egg to each nest and sprinkle with thyme and salt/pepper. Bake 6-12 minutes depending on how runny your like your egg. (i did 6 minutes for runny) Enjoy with a dash of hot sauce!
