I'm not blogging today.

I'm not blogging today because I'm in a terrible mood. Outwardly I'm being incredibly nice to everyone, I was even nice to the TSA lady who made a woman out of me during her pat-down. But inwardly, I'm about to blow a gasket. I'm even wearing a shirt that says, 'Hakuna Matata'. I mean, could I be more of a phony!?!? I have my sunglasses on inside because I was tired of them falling out of my shirt every time I bent down to move my bag along the security line. Why did I check the bag that has wheels when it could have been carried on!?!? I think my sanity was in that suitcase. Get me home. I can't wait for this mood to pass...and I know it will. In the meantime, if you see a girl with sunglasses and a fucking Lion King shirt on, stay out of my way or else I'll be extremely nice to you.

Last night.....

Last night Sarah and I took the babies to see their Great Grandma Salinas in Pearland.  For the last 18 years our Aunts and Uncles have been taking care of her so she can live in the comfort of her own home.  The home my late Uncle Jim built for she and my Grandpa.  The way her 7 kids have come together so she can live in that special home has been a huge lesson in love, patience, compassion, and so much more.  Quite frankly, we all have some big shoes to fill when it comes to taking care of our parents, and hopefully, one day, our babies will do the same for us.

We want our Aunts, Uncles and my Dad to know how incredible we think you are (as well as your spouses). As you look to a nursing home for the next step in Grandma's long beautiful life, we hope you know she will be fine there. She will always have her children by her side, and that is where her home truly is - with all of you. 

I think I need 6 more babies.

Chocolate Chipotle Brownies

i usually get all my food inspiration from what i eat in restaurants and then try to duplicate it at home!  Recently i started to slowly change my diet and i have been loving the outcome.  The Two biggest changes i have made are using xylitol instead of sugar and oat flour instead of flour- WOW have i seen a difference!  lbs gone! happy girl

I crave the Chocolate Chipotle Dessert at Hugo's A lot... so i decided to tweak it!

Here is my recipe!>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>

4 large organic cage free eggs
1 c unsweetened good cocoa powder (i like Penzey's)
1 c xylitol
1/4 c + 1 tbsp extra organic virgin coconut oil (make sure you buy the one for baking/high heat)
2 tbsp good Madagascar bourbon vanilla extract
1/8 tsp salt
1 tsp cinnamon (penzey's)
1/2 tsp chipotle (penzeys)
1/4c of toasted walnuts chopped (toast walnuts for a couple of minutes  in oven while prepping)

preheat oven to 350 degrees 

in a Vitamix mix all the ingredients until nice and smooth.  Pour into a parchment paper lined loaf pan (8x4) and sprinkle walnuts on top.  Bake for 10-15 minutes.  leave the brownies to chill at least 1 hour before cutting.  Sprinkle with powder sugar. ENJOY

We recently teamed up with Rebecca Lankford to feature her current Summer Collection. We have been dying over her jewelry for years now and are so excited to be able to show you some of her latest pieces.  Attorney turned jewelry designer, she was one of the first to introduce the Sideways Cross Necklace.  Starting out at Glassell School of Art; she found her biggest break when her collection was featured at Koelsch Gallery.  Since then her pieces have been featured in many magazines, blogs, etc.  I think the most fun about her jewelry is how easy it is to layer and layer and layer. Coco Chanel's rule does not apply when wearing her pieces, it's probably best to add one more before walking out the door.
